OUR CREATIONS — Jellies, Jams, Spreads & Mustards
Malty & Hoppy Delicacy is a Toronto-based company crafting beer-infused preserves with a French twist.
Founded by Françoise Briet, the brand combines her French culinary heritage, a passion for craft beer, and a love of Ontario’s rich, local flavours. From the original, public-favourite beer jellies to our award-winning jams, bold spreads, and artisan mustards, each jar is made with care using local ingredients, minimal sugar, and eco-conscious methods.
Welcome to Françoise’s flavourful world — where craft beer and apple cider meet terroir.
FEATURED CREATION
A curated selection of our finest beer jellies, jams, spreads, and mustards — crafted to surprise and delight
A bright, citrus-forward jelly infused with Ontario Pale Ale (Canuck from Great Lakes). Expect aromas of grapefruit zest, passion fruit, tropical citrus, ripe peach, and subtle pine — a complex yet approachable profile that invites culinary creativity.
Pairing suggestions:
Creamy cheeses like Brie, Oka, or triple-crème goat cheese, young Gouda or mild clothbound Cheddar
Toasted brioche, buttermilk scones, or crisp rye crackers
Culinary inspiration:
Warm oven-baked Brie with roasted pecans or thyme
Fold into a citrus-spiked aioli for grilled shrimp, roasted chicken, or fried green tomatoes
Glaze for white fish, duck breast, or pork tenderloin
Finish caramelized peaches, roasted pineapple, or an apple tarte Tatin with a spoonful of whipped cream infused with this beer jelly

Infused with Wellington Brewery’s bold Imperial Stout, this jelly is dark, rich, and decadent. Expect layered aromas of dark chocolate, espresso, and roasted malt, with hints of toffee, dark fruit, and a gentle bitterness on the finish — a savoury-sweet indulgence with complexity and soul.
Pairing suggestion:
Charcuterie, rillettes, terrines, or even foie gras
Burgers made with beef, bison, or lamb
Serve on French baguette, dark rye, or sourdough
Cheese lovers: try it with Bleu d’Auvergne, Ontario Celtic Blue, aged Cheddar, or a black olive chèvre
Culinary inspiration:
Glaze for roasted vegetables, especially beets, carrots, or Brussels sprouts
A surprising companion to fresh oysters or scallops
Stir into sauces for braised short ribs or lamb shank
Try a spoonful with dark chocolate desserts or over vanilla ice cream for a gourmet twist

A bold, umami-rich spread that brings together the deep sweetness of locally curated black garlic and the intense character of Wellington’s Imperial Stout.
Slow-aged garlic develops soft, jammy flavours of molasses, dark chocolate, and dried fruit, with subtle acidity and savoury hints of balsamic, soy, and tamarind. The Imperial Stout contributes layers of coffee, vanilla, dark fruit, and roasted malt, making this spread earthy, complex, and incredibly indulgent.
Pairing suggestion:
Italian-style charcuterie, rillettes, terrines, and foie gras
Game meats, grilled lamb, or beef tenderloin
Cheeses like creamy blue, aged Gouda, Parmigiano-Reggiano, Pecorino, or even salty feta
Culinary inspiration:
Stir into aioli or mayonnaise for burgers, steak sandwiches, or prosciutto baguettes
Spoon into deviled eggs with cracked pepper and lemon zest
Glaze for roasted mushrooms or vegetables
Try with dark chocolate mousse or cocoa-dusted truffles for a savoury-sweet surprise. Don’t forget to pair with a glass of earthy wine (like a Cabernet Sauvignon, Merlot, or Syrah)

FOUNDER
MALTY & HOPPY DELICACY
“From France to Toronto, from science to the stovetop — I’ve walked many paths. With a Ph.D. in nutrition, I worked in clinical research and global food security before becoming a private chef and entrepreneur. Cooking for the French consul in Toronto deepened my love of flavour and craft. Today, I blend tradition, science, and creativity to create preserves rooted in purpose and made to be shared.”
INSPIRATION BEHIND THE BRAND
“I’m originally from Beaune, in Burgundy — a region celebrated for its wines, mustards, liqueurs, and world-class cuisine. Growing up surrounded by these traditions, I developed a deep appreciation for the art of pairing food and alcohol. While wine was the norm, it was beer that surprised me: bold, versatile, and beautifully suited to food (including cheese, of course!). That unexpected discovery inspired me to create Malty & Hoppy Delicacy — a tribute to flavour, tradition, and a new kind of pairing.”
"I love Malty & Hoppy Delicacy because every flavour is so creative, but also incredibly elegant. It’s gourmet without being complicated - pure magic in a jar!"
— Marc A, Toronto.
"Honestly, these jams and jellies are next-level! I’ve never tasted anything like the mix of beer, fruit, and spices. Every jar feels like a little surprise!"
— Clara M, Burlington.
"Whenever I bring a jar to brunch or a cheese night, everyone wants to know where I got it. It’s unique, local, and always a hit!"
— Ethan P, Ottawa.
"You can taste the passion and creativity in every product. Francoise manages to turn craft beers into something magical — delicate jellies, bold mustards, and jams full of character. It’s boutique gastronomy in a jar!"
— David R., Montreal.
